Couple married for nearly 4 decades is on a delicious quest to eat at all the diners in New Jersey

When you are married and have been living with someone for a long time, you will get eventually reach a state of ease and comfort around each other. A New Jersey couple, Jon and Karri Ricklin, are all that mixed with a raring spirit for adventure. They have been married for almost four decades now and are on a super fun adventure of their own.

In an interview, the couple told TODAY that in 2015, Jon and Karri visited a diner. Out of nowhere, Kari took out her phone to click Jon's picture — one where he posed with the diner's menu. Seeing the photo, Jon jokingly commented, "It would be really cool if we could take this exact same picture at every diner in the State of New Jersey."

While the couple did know that New Jersey is famous for the incredibly high number of diners, it was as if it had not dawned upon them just how many diners there were in reality. Today, however, Jon maintains a database with the information of the 415 diners that he has been able to find in the state so far.

Jon owns his own dry cleaning pickup and delivery service, while Karri is a nurse. Each month, this couple waits for Karri's schedule so they can figure out which days they have free in common. And that's when they set of on their quest to visit diners.

This couple is quite different in a lot of ways. While Karri's go-to is undoubtedly salads, Jon cannot fix his mind on one thing. When asked about it, he said, "The basics, either a burger most of the time wraps, paninis, the souvlaki and gyro platters. With our schedules, it's tough sometimes to get to breakfast, but you know, what will usually happen is she'll order her eggs and it'll come with sausage or bacon. She sort of slides it over to me."

All things said and done, the couple is surely very inspiring. To not only be willing but also excited to do something this adventurous with your spouse after 39 years of marriage is undoubtedly commendable. Not to mention, very out of the box as well. They have also been featured in local newspapers and interviewed for their journey.

While most empty nesters or child-free couples often find it hard to figure out what to do to keep themselves busy, Jon and Karri have no trouble keeping themselves engaged. With about 212 restaurants ticked off from their list, they are halfway through their journey in just 8 short years.

The couple has also been documenting their visits to all the diners in New Jersey on their Instagram page (@njdinerjourney) by clicking a picture of Jon with a menu at every diner they visit. One might think that if you have been to over 200 diners with someone, you are bonded for life and we absolutely agree. After all, their adventure is as fun as it is comfortable. In Karri's epic words, "It's a vacation... without the suitcase."
